Anyone have any good cold-food recipes? It's 90 degrees and HUMID here and I don't have AC. I want some ideas on stuff to make over the weekend. Bonus points if it requires little cooking. I have a ton of pasta here, so pasta salad recipes would be welcome - even if that does involve having boiling water sit on the stove.

Here's one I made last week and we really liked it. Good alternative to hummus.

Feta, Walnut and Herb Salad
(I wouldn't consider this a salad, more like a nice cold dip for pita chips, carrots, etc.)

2 Tablespoons each of fresh mint, parsley, and basil
7oz feta cheese
7oz of shelled walnuts, chopped
6 scallions
1 clove of garlic
Half-teaspoon of salt
pepper (to taste)
1 Tablespoon lime juice
1/4 cup olive oil

Throw it all into a food processor and blend until it becomes a grainy paste.

It was really good! Let it sit in the fridge for a day and get nice and cold and allow the flavor of the herbs to come out. I discovered that the walnuts and feta I bought came in 6oz packages so I used 5 scallions instead and I have to admit I didn't bother with actually measuring out the lime juice and olive oil. I always eyeball stuff like that in these kinds of recipes.

hmmm, I'm probably too late, but you could make a gazpacho. I've been wanting to try a white gazpacho

No pasta salad recipes. I have a good lentil salad recipe, but it's warm. hahah. We make fagioli a lot, with a drained can of kidney beans, same of white beans, zest of 1 lemon, lemon juice, chopped fresh basil, balsamic vinegar, a can of italian tuna (or a tomato, but not both because they taste weird together), olive oil, salt & pepper. mix it all together and then serve over mixed greens or baby arugula.

Okay, I'm italian and I've never heard of fagioli or italian tuna! It sounds good though, might have to give it a try!

dressing-less pasta salad
this involves a little cooking, but it's worth it.

prepare a salad. lettuce, spinach, chopped carrots, mushrooms, croutons, cucumbers, etc.- whatever sorts of things you like in your ruffage. give it a good sprinkle of salt and pepper. fresh chopped basil would be great with this if you have some.

grate up a large bowl of parmesan cheese, add to the salad mix. don't toss, let it sit on the top.

chop up an onion and saute it in some butter. grill a chicken breast, then chop it into small bits. set aside. a cold-meal alternative could be a can of chicken, or some chopped ham. If vegetarian, obviously omit this step.

boil about half a bag of interesting noodles- multicolored veggie spirals are best. Drain the water off but leave about a half-inch in the bottom. pour this into the salad mix and toss. the remaining hot water will melt the cheese.

put the chicken and sauted onion in and toss some more, then serve!
